Peppermint Brownies

Gooey, chocolate brownies with a top layer of melty peppermint crunch

Equipment

Ingredients

  • 10 tbsp butter melted
  • 1 1/2 cups sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/4 tsp salt
  • 2/3 cup cocoa powder
  • 1/2 cup flour
  • 1/2 cup chocolate chips milk or dark
  • 1/2 cup crushed peppermint candy

Instructions

  • Preheat the oven to 325
  • Grease your baking pan, or line it with parchment paper
  • Combine the melted butter, sugar, vanilla, and eggs. Mix well
  • Mix in the salt, cocoa powder, and flour, stirring until the batter is smooth
  • Add the chocolate chips, and stir until just mixed through
  • Pour the batter into your prepared pan. Use a spatula to spread the batter evenly into all corners, as necessary
  • Bake the brownies for 15 minutes, until the batter has just begun to set, then remove the pan from the oven
  • Sprinkle the partially-cooked brownies with the crushed peppermint candy to evenly coat the top of the brownies. Be careful not to burn yourself on the hot pan!
  • Return the brownies to the oven for another 5-10 minutes, until they are baked through to the desired doneness, and the crushed peppermint candy has begun to melt into the top layer of brownie. Test by inserting a toothpick into the middle of the pan; the brownies are done when the toothpick comes out clean

Notes

The crushed peppermint bits can be as big or as small as you'd like! I find it's easiest to crush up several candy canes together by sealing them in a plastic bag, placing them on a sturdy counter, and hitting them firmly with a rolling pin until they have broken into pieces and you are satisfied with the size.
